What exactly does sanitizing remove?

Document-open JavaScript, auto-run actions on the document and its pages, the document JavaScript name tree, embedded file attachments (including file-attachment annotations), external URI link annotations, and scripts attached to form fields. Visible page content, internal navigation links, and bookmarks are untouched.

Will my form fields or their values be affected?

No. The form-scripts option deletes only the validation, formatting, and calculation actions attached to fields. The fields themselves, their current values, and their appearance stay exactly as they are.
